Paprika and thyme chicken

January 31, 2014 by date with a plate.

It was another case of mid-week laziness. I knew it was my turn to cook dinner, I just couldn’t seem to summon the energy to be inventive, so I rustled up an old favourite that I know the boy likes: my paprika and thyme chicken. This little dish owes its origins to an abundance of thyme in the garden and an excess of paprika in the spice rack – I quite literally just banged this one out, but its become […]

Moroccan Chicken

August 23, 2013 by date with a plate.

I haven’t yet been to Morocco, but it’s on my hit list. Regardless, I can still make Moroccan Chicken and pretend to be there……sort of. Anyway, this is a great mid-week meal and can easily be scaled up in quantity to cater for a large group, or a hungry family. The method is easy, the flavours are great and the effort factor is minimal – can I get a “hell yeah!” Another great thing about any type of stew is […]

Pepper Sauce, the Trini way

June 3, 2013 by date with a plate.

There’s something to be said for those who can handle the Habanero chilli. As someone who has never been able to enjoy chilli much beyond a Jalapeno, it is with great admiration that I watch my very dear friend Roger (Trinidadian born and bred) devour his family’s favourite condiment, Pepper Sauce. Out of love for Roger and my boyfriend Ollie, I planted a Habanero bush in my vegetable garden in the hope of producing enough of the fiery chillies to […]

Nigella’s Lemon Polenta Cake

May 26, 2013 by date with a plate.

A combination of two things led me to this recipe; an overly abundant lemon tree at my Mum’s house and a desire to use polenta in baking. It would appear (to me at least) a match made in baking heaven. My Mum’s lemon tree is consistently plentiful with deliciously sweet lemons, not the normal hard skinned lumpy variety, but instead a perfectly oval shaped, thin skinned and sweet flavoured variety which I have come to love over the years. It is […]

Pork & Prawn Wonton Soup (my humble attempt)

April 11, 2013 by date with a plate.

One of my favourite cuisines would have to be Asian, I love the simplicity in much of the recipes as much as the variety of the flavours from country to country. Having journeyed to such destinations as Indonesia, Vietnam, Cambodia, Singapore, Hong Kong and Thailand I have had a relatively decent exposure to the different cuisines and styles of cooking. Travelling through Vietnam I fell in love with Pho. Travelling through Indonesia I hunted for the perfect Soto Ayam. Travelling […]

I love mussels more than muscles

April 2, 2013 by date with a plate.

An unsuccessful fishing expedition on Sunday afternoon left me slightly disappointed, hungry and with a bad hankering for some seafood. So I figured that if you can’t catch it, buy it. I subsequently visited the local fish store and left with 2kgs of fresh mussels (thankfully they come already cleaned and de-bearded – convenience at its best). Although my friends were hoping to have a fish or two at the end of their lines earlier in the day – I […]

Corn, made sexy

March 21, 2013 by date with a plate.

I bet you thought it wasn’t possible to make the humble cob of corn sexy – but I have a recipe that does just that! It all starts with the simple fact that I’m an absolute sucker for any food that’s listed as being on “special” (a trait passed down from my dearest Dad), and so it was that after a recent Saturday morning trip to my local Farmers Market I picked up corn cobs for $1 each (on special […]
