Sponge cake with strawberry jam icing

Quince & yoghurt cake

Just for the record, a quince is a fruit. A delicious, fragrant and golden yellow fruit. Nigella’s Lemon Polenta Cake

A combination of two things led me to this recipe; an overly abundant lemon tree at my Mum’s house and a desire to use polenta in baking.
