Father’s Day in my family is always about the food, we don’t go crazy on gifts. Instead we like to share a nice meal together, and this year I opted to cook for my family (with the help of my lovely boyfriend). So there’s two posts today, the main and the side. I opted for a lovely leafy salad to go on the side of a pasta dish I made and it worked perfectly. Crunch from the fennel, sweetness from the grapes and a little bit of indulgence from some Danish feta.
This is a wonderful salad which I semi recreated based on a version one of my girlfriends made earlier in the year – I had been hanging out for an opportunity to recreate it. I love it because its simple, yet has so much flavour and it was perfect with the Duck Ragu that it sat alongside.
Serves 5 as a side salad
The List:
1 bag of washed rocket
1 handful of baby spinach leaves, washed
1/4 bulb of fennel, finely sliced
1 large handful of seedless green grapes, halved
100g Danish feta
1/2 lemon
3 Tbs olive oil
Cracked black pepper
The Method:
- Into a large bowl arrange the rocket and spinach leaves
- Evenly layer on the grapes, fennel and crumble over the feta
- Just before serving, squeeze over the lemon, drizzle on the olive oil and season with black pepper
